Parade of Tables

On Saturday, March 8th, 2008 Mt. Sinai Baptist had their first Parade of Tables.  It was a huge success and far exceeded our expectations.  We want to again Thank everyone for those who helped in any way.  Without you this would not have been possible.  Most importantly we give thanks to God for His blessings.

Everyone enjoyed the menu for the evening.  Several requests were made for recipes and have been included below, so hope you enjoy!!!

Breaded Ranch Chicken

A coating containing cornflakes, Parmesan cheese and ranch dressing mix adds delectable flavor to the chicken breast in this recipe.
Each piece bakes to a pretty golden color.

3/4 c. crushed cornflakes
3/4 c. grated Parmesan cheese
1 envelope ranch salad dressing mix
8 boneless skinless chicken breast halves (2 pounds)
1/2 c. butter or margarine melted

In a shallow bowl, combine the cornflakes, Parmesan cheese & salad dressing mix.  Dip chicken in butter, then roll in cornflakes mixture to coat.  Place in a greased 13 x 9 x 2 baking dish.  Bake uncovered at 350 degrees for 45 minutes or until juice runs clear.  Yields 8 servings.

Hash Brown Casserole (1/2 for family)

2 lbs. frozen Hash Browns
2 sm. cans of cream of potato or mushroom soup
1 pt. sour cream
1 lb. sharp cheddar cheese
1/4 tsp. pepper
1 tsp. salt

Mix all ingredients, but 1/2 the cheese in casserole.  The other 1/2 on top.  Bake 1 hr and 15 minutes at 350 degrees.  Serves 12
